Entertaining for the holidays or new year’s eve celebrations? While parties are fun, they can also be a lot of work! I like to have signature beverage and cocktail recipes on hand for our home gatherings. Over time, I’ve found that keeping things simple is always best. This delicious champagne cocktail with its lovely red color is as easy as it gets! The addition of pomegranate juice makes it truly special.
Why a pomegranate champagne cocktail? Pomegranates are as sweet as they are symbolic. They are one of the very first human-cultivated fruits, and they’ve played a symbolic role in various cultures and religions for centuries. Pomegranates decorated Solomon’s Temple in Jerusalem; they also appear repeatedly in the Biblical Song of Solomon. Likewise, in Buddhism, the pomegranate is considered one of three blessed fruits. The deity Ganesha in Hindu culture is often depicted holding a pomegranate. In ancient Greek mythology, Hades tempts Persephone into marriage with… what else?… a pomegranate.
To make this bubbly cocktail, simply combine pure pomegranate juice, Cointreau (or orange liqueur), and sweetened lime juice. Top it off with champagne. Pour it over a garnish of juicy pomegranate seeds, and you’ve got a lovely, refreshing, and festive drink!
This is truly an elegant champagne cocktail, and so easy to make. It’s perfect for toasting when that big sparkly ball drops on New Years, or for any festive holiday occasion.
How Do I Make a Large Batch of Champagne Cocktails?
Want to make a big batch of champagne cocktails? Easy! Premix several servings of pomegranate juice, Cointreau and sweetened lime juice in a pitcher, then chill– for 32 servings you would use 4 cups of pomegranate juice, 2 cups Cointreau and 1/3 cup + 1 tsp sweetened lime juice. When ready to serve, stir up the pre-mixed juice mixture, place pomegranate seeds in the champagne flutes, then pour in 3 1/2 tbsp of the chilled juice mixture per flute. Just before serving, top off the flutes with chilled champagne.

- 2 tablespoons pure 100% pomegranate juice, chilled
- 1 tablespoon Cointreau
- 1/2 teaspoon pomegranate seeds
- 1/2 teaspoon sweetened lime juice
- Champagne, Prosecco, or sparkling wine, chilled

- To Make Cocktail: Spoon the pomegranate seeds into the bottom of a champagne flute. Add pomegranate juice, Cointreau and sweetened lime juice. Stir gently. Top off the flute with chilled Champagne or sparkling wine.Virgin Mocktail Modification: Substitute 1 tbsp freshly squeezed orange juice for the Cointreau and non-alcoholic sparkling cider or club soda for the champagne or sparkling wine. This makes a really tasty non-alcoholic version!
